Atheists: Why do you dismiss personal experience as a valid form of "evidence?"?

I understand the need for empirical evidence in scientific methods. But should the same standards apply to all areas of life? Isn't faith, spirituality etc...different substantially? For example, when you read a profound book and learn some truth from it, or have a moving experience, it's valid isn't it? But how would you "prove" that to someone else?
